Best rim size for Race SE5?

Hi. I'm looking to specify a set of 7 x15'' Minilite style alloy rims for my car as they would appear to be an optimum size to fit within the arches if I can work out the correct offset etc 8 x 15's would seem a step too far and foul the arches. Any advice would be welcome as the wheel manufacturers...
